Turkey taco rice skillet

Brown the turkey
Heat oil in a deep skillet over medium-high. Add chopped onion and turkey. Cook 7–8 minutes, breaking it up, until the turkey reaches 165°F. Stir in spices.

Simmer the rice
Stir in rice, tomatoes with juices, broth, black beans, and corn. Bring to a boil. Cover, lower heat, and simmer 18 minutes without lifting the lid.

Rest and add cheese
Remove from heat and rest, covered, for 5 minutes. Fluff the rice. Scatter cheddar over the top, cover 2 minutes to melt, then add favorite toppings.
All the useful parts of taco night land in one skillet here. Cook the turkey to 165°F before adding the rice, then keep the lid closed while the rice simmers so it cooks evenly. Contains milk; check broth and spice labels for other allergens.
Questions before you cook
Does this use cooked or dry rice?
Use dry white rice. It cooks in the skillet with tomatoes and broth; cooked rice would not absorb the listed liquid in the same way.
Can I substitute brown rice?
Brown rice needs different timing and liquid, so it is not a direct swap. Keep white rice for the published method.
Substitutions and ingredient choices
Another melting cheese is an untested alternative to cheddar. Check its allergens; changing cheese does not make the dish dairy-free.
How should I store and reheat leftovers?
Refrigerate perishable leftovers in shallow containers within 2 hours, or within 1 hour above 90°F. Keep the refrigerator at 40°F or below and use leftovers within 3–4 days. Reheat leftovers to 165°F, checking with a food thermometer. These are general USDA safety limits, not a tested shelf-life claim for this recipe.
Reheat covered with a little water, stirring to distribute heat through the turkey and rice.
